there. The cooling breezes help to maintain fresh acidity, and warm sunny days allow
for even ripening. We were so impressed by this particular lot that we held it back to
give it extended aging it on its lees for 12 months to develop even more complex
flavors and textures.

Serve in a white wine glass slightly warmer than fridge temperature.
